Chef Sommeliere Zoé Cousemacker

Zoé Coussemacker, Sommelier

Through the 300 or so wines on the Vivier Restaurant's wine list, Zoé will share her passion for vines, wine, the terroir, and the people who make it happen.

Born in 1998 in Chalon-sur-Saône, in the heart of Burgundy, Zoé grew up surrounded by beautiful meals and a culture of fine food. But it was in New Zealand, during an unexpected tasting, that she truly discovered wine—a revelation that changed everything.

Back in France, she worked in the vineyards, learning the basics, then pursued sommelier training at INSEEC in Beaune. She then trained at La Maison du Colombier, a legendary wine bar with over 4,000 selections, where she stayed for more than three years. Her career then took her to the two-Michelin-starred restaurant La Chèvre d’Or in Èze, where she honed her palate and mastered the art of perfect food and wine pairings.

At Le Vivier, after a smooth handover to Laurie Donjon, she took over as head sommelier.

What does she love about Le Vivier? The warm atmosphere, the emphasis on wine, and the creative cuisine, all driven by a constant exploration of food and wine pairings. Her favorite thing? The restaurant's inviting ambiance, perfect for offering guests the most exquisite Michelin-starred experience!
